— Six kitchens · ستة مطاعم —
Walk the hall. Six real menus — a pearl-coast fish house, a warehouse café, a DIFC bistro, a desert grill, a fourteen-seat izakaya and a family trattoria — each opening as you reach it.
بيت البحر
Emirati seafood · Jumeirah, Dubai
A pearl-diving family's fish house, three generations on. The owner wanted the menu to feel like their grandfather's dhow — rope borders, sails and pearls — and the catch section reprinted whenever the boats change.
مقهى روى
Specialty coffee & brunch · Alserkal Avenue, Dubai
A courtyard café inside a converted warehouse. They print a new A5 booklet every season — this spring edition took eleven minutes to lay out, including the Arabic.
لا ريف
French bistro · DIFC, Dubai
A forty-cover bistro that changes its plat du jour weekly. They fold their own trifolds in-house on Sunday mornings — the panel order is set for roll-folding, so the cover always lands right.
كشتة
Desert grill · Al Qudra, Dubai
Open only from October to March, on a dune platform an hour from the city. Guests read by lantern light, so the type is set larger and the ink runs warm on dark.
سومي
Izakaya · Business Bay, Dubai
Fourteen seats around a charcoal counter. The menu is a slim DL card reprinted every morning from the same file — only the prices and the day's fish move.
نونا فيرا
Trattoria · JBR, Dubai
A family trattoria on the walk, run by two sisters. The pasta list changes with what arrives on Tuesday — so they keep the design and swap the dishes, which takes about five minutes.
